Dear Cheddar Manufacturers

If I can't taste it over the hot relish, it isn't bloody mature, OK?

Seconded.

I'd send it, its getting really prevalent the use of 'mature' on cheddar - and some of them taste almost continental cheese mild .... and I've actually GIVEN UP smoking for a couple of years now - my taste buds should be more sensitive right now !

I think basically that the mature of yesteryear is now called vintage.

*sigh*

See if you can get hold of this one. It's the best cheddar I've ever tasted.

Oddly the deli near to where I work in Marston sells it. Lovely and soft, but still a little too subtle, I felt. Apparently they have a more mature one from the same company, which I look forward to trying.
